The Best Breakfast of Your Life

Who likes breakfast? I know I do.

My favourite day of the week is Sunday. I have absolutely no reason for the choice, other than I like the pure lazy feeling that the day brings. I love the idea of waking up a little later and cooking a nice, warm breakfast and taking it back to bed. I scramble around for quick breakfasts during the week, so the weekend is a chance to take my time with things and (try to) give my food the love that it deserves.

I’m not a food blogger or a chef by any means, but I definitely have a love affair with food. I’m also a student in college, so I love anything that is quick, easy, and tasty to eat. I’ve been trying to improve my lifestyle over the last month, so that means that I’ve been looking at the type of foods that I eat. It turns out that I love feta, bacon and wholemeal pasta a lot 😉 I’m also a fan of chicken, eggs and that Jelly Tip chocolate. Word on the street is that the Jelly Tip cookies are pretty good as well.

Guess I’m not as “healthy” as I thought I was 😉 Oh well.

There is one recipe that I go back to over and over again, and that is what I’m going to be sharing! Everyone needs to jump on this train because it is going to blow your mind.

I love mini frittatas because they are quick, easy and you can put anything in them. They are fantastic. They are addictive. They need to be in your life. Trust me. There isn’t a real ‘typical’ recipe, since you can put anything you want in frittatas. That is part of their beauty. This ‘recipe’ is going to be what I typically put in my mini frittatas.


Main ingredients:

  • 1 whole egg
  • 1/2 C milk
  • Salt and pepper

The mind-blowing ingredients:

  • More pepper (lots of pepper)
  • Chilli flakes (lots of them)
  • 1/4 red onion
  • 20g edam cheese
  • 50g shaved ham
  • 2 T diced jalapeños
  • 1/4 capsicum

Method

Pre-heat oven to 180°C.

Break the egg into a bowl and season with salt and pepper. Combine egg mixture with milk.

Chop other ingredients and combine with the egg mixture.

Pour the mixture into a cupcake tin and bake for 20-30 minutes.


That’s it! 🙂

These measurements typically fills five places in a cupcake tray 🙂 I love them so much that I could eat them for breakfast, lunch and dinner. In fact, I had this for dinner tonight. I was talking to Chelsea about how breakfast for dinner AKA brinner is the best thing. Almost as good as having dessert in place of dinner 😉

I sincerely hope my future husband likes breakfast foods, because there is a 90% chance that they are all I will be able to cook.
