RECIPE: Taco Salad!

I have been craving this more than coffee and that says a lot. Really. I’ve always said that coffee is my first love and I will probably stand by that statement until my dying day. This “salad” probably comes in a close second. I’m no chef by any means, but I do “like what I like” aka I’m probably one of the fussiest eaters that you will ever meet in your whole life. When my friend’s mum showed me this recipe my only response was: “There is no way in hell…” which trailed off into something like “KDjfhkdfn so good” once I made it for myself.

All I ask is that you don’t judge a book by its cover and give this recipe a chance for speak before itself before you write it off. It may not look like the prettiest of dinners, but I can guarantee that it makes up for it with taste. I’m also no nutritionist, but I’m hazarding a guess that eating this for dinner every night of the week would probably have some less than desired results 😉 Unless you were willing to make a healthy (healthier) switch for some of the listed ingredients.

I haven’t made this recipe in donkeys years, so I actually had to scour the internet for an image that didn’t look too staged or too ‘perfect’. Emily’s photo did the trick. It made it look good, but it also gave a realistic view of what your finished product is going to be, which is, if you haven’t guessed, something that isn’t exactly “pleasing to the eye” unless you have a magic touch with food presentation. (That is something I do not have).

Ingredients

– 1kg prime minced beef OR 1kg minced turkey

– 1/2-1C cheese OR a dollop of sour cream for serving

– Cheese/plain corn chips OR you could create your own by coating a wholemeal wrap/tortilla in spices then baking it off in the oven

– Thousand Island dressing (The whole small bottle)

– 3-5 Tomatoes

– 0.1-1 Lettuce

– Taco seasoning mix

Method

Cook off mince in a pan until nice and brown. Add taco seasoning mix to pan and mix that all together so the flavoring works its way through the mince. {You don’t want half plain, half spicy mince. Uck.}

While the mince is cooking grate your cheese, shred the lettuce, chop the tomato into bite sized {or slightly larger} pieces, crush all the corn chips and open that bottle of dressing!

When you’ve finished mixing the seasoning through the mince take it off heat and put it in a {relatively large} dish so you can mix everything together. Once it’s in a bowl just put the rest of the ingredients in and mix together. It doesn’t matter about the order, just make sure it all gets in there! My only tip – make sure you put the corn chips in last otherwise they go all soggy and disgusting. No one likes soft chips.

It is simple. It is quick. It feeds a lot of people and it tastes pretty damn amazing. I’m going home in two weeks for my mid-semester break and I can promise you that Taco Salad will be one of my requested dinners!

  1. Yummm!! I saw your post yesterday and got so inspired that i made myself a taco salad for lunch today 🙂 A vegetarian version, but still sooo good 🙂 Adding avocado and sweet corn is also super delicious 🙂
